Beat 3 eggs, mix with scallion (3 strips, chopped) and corn starch (1t) water (2T). In a separate bowl, mix Soy Sauce (2 t), Sugar (1 t), thinly sliced beef (0.5 lb, ~1/8” thick). Heat pan, add oil (1/2t), wait ~ 2 to 3 min or until light smoke appear. Add the beef mixture, stir-fry for ~2 min. Turn heat to low, add beaten eggs mixture. Slowly stir until eggs start to solidify. Turn off heat, ready to serve!
Use high heat to for the initial stir-fry of the beef. Turn heat to low when adding eggs.
Add corn starch water (corn starch (1t) + water (2T)) for soft and smooth scramble eggs.
Break egg, individually, in a separate container and then transfer to the mixing bowl when handling more than 2 eggs. Two purpose:
- Minimize the chance of 1 bad egg ruin the whole batch of eggs.
- Use the egg transferring bowl to mix beef. The leftover egg white can help to keep beef soft and tender.

Add chopped Garlic when Stir-frying beef for extra flavor and aroma
- Pan/skillet (~ 8 to 12”)
- Bowls for mixing
- Cutting board
- Measuring spoon
- Thin sliced beef, 0.5 lb, ~ 1/8 inch or less. See “Chinese Cooking Basics: how to slice beef?”
- Eggs (3)
3. Scallion ( 2 to 3 strips)
Units: t = teaspoon, T = Tablespoon.
- Soy sauce – 2 t
- Sugar ~ 1 t
- Oil – ½ to 1 t
- Salt ~ 1 pinch
- (optional G.E.M.1) Chopped Garlic. See my previous post for “quick and easy way to get chopped garlic“.
Chop Scallion into ~1/2 to 1/4 inch pieces.
Break egg into a “transferring bowl”, one at a time, then transfer to the mixing bowl. Beat eggs.
Add chopped scallions and corn starch water to the beaten eggs. Add a pinch of salt for taste.
Using the same bowl for transferring eggs, add thinly sliced beef, soy sauce (2t), and sugar (1t). Mix well.
Put Pan/skillet on the stove, High heat. Add oil (~1/2t).
When oil starts to smoke, add beef mixture. Stir-fry for 1 min. (optional G.E.M.1) Add chopped garlic to stir-fry.
Turn heat to low, add the egg mixture, slowly stir to mix eggs and beef until the eggs start to solidify (see the right image above) (~ 2 to 3 min).
Turn off heat and it’s ready to serve!
