Stir-Fry Pepper Steak with Scallion (黑椒蔥爆牛肉)

SHORT VERSION:

Mix Beef strips (1/2 lb, ~ pinky finger size) + Soy Sauce (1T) + Sugar (0.5T) +corn starch (0.5T). Cut scallions into 2 to 4″ pieces. In a hot pan, add oil (0.5 T), add scallion, then add beef + sauce. Cook for ~ 2 to 4 min. Add black pepper and stir to mix. Turn heat off after mixing.

TIP:

Tip.1

Mix Beef with sauce before cooking so the sauce can penetrate more deeply and evenly in beef.

Tip.2

Stri-Fry beef first, add Black Pepper last to prevent burn. A few quick stir is enough to bring out the peppery flavor.

Sprinkle some toasted sesame seeds on the dish to add flavor and bring contrast when plating.

Add 1 T of rice wine into the pan (from the side) before turning off the heat to add flavor and bring out the peppery aroma.

  1. Skillet or Pan (8 to 12”)
  2. Knife

  4. Measuring spoon/cup.

Protein:

1. Beef, any cut (some supermarket has stir-fry ready beef strip)  – 1/2 lb

Vegetable:

2. Scallion – 4 strips.

Sauce/condiments/Spices

Units: t = teaspoon, T = tablespoon, C = Cup.

*note* relative ratio is more important the absolute amount.

3. Oil ~ 0.5 T

4. Soy sauce – 1T

5. Sugar ~ 0.5 T

6. Black Pepper – 1 t to 1 T, depending on how much you like peppery flavor

7. Corn starch ~ 0.5 T

Before Cooking:

(Skip if beef is in stir-fry ready strips)

Cut beef into strips, about the size of your pinky finger.

Cut scallion into ~ 2 to 4” long pieces.

In a large Bowl, Mix Soy Sauce, sugar, corn starch, and beef strips together.

Put skillet/pan on stove, turn heat to high.

How to check if pan is hot? Just sprinkle some cold water; pan is hot when all water evaporates.

Add Oil (1 t) into the skillet/pan, then scallion, give it a few quick stir, then add the mixture from prep.2 into the pan. Stir to “stir-fry” the beef strips and scallion.

When all the beef strips changed color (~ 1 to 2 min), add black pepper (1 t) into the pan; stir a few times to mix with beef.

GEM.2 (optional step)

Add 1 T of rice wine in the pot from the side. Stir to mix with beef. (Hopefully you can smell the aroma from the black pepper and rice wine now.)

Turn off heat and it’s ready to serve!
