Quick and Easy, Stir-fry Frozen Tofu with Tomato (番茄炒凍豆腐)

Hands-on Time: 10 min, Total Time: 10 min.

SHORT VERSION:

Cut frozen tofu (1 box) and tomato (~ 0.5lb) into pieces. Cook, in a pan, tomato + salt for ~3 min. Add tofu + cooking wine (1/4 C) + ketchup to cook for ~ 3 min.

 

Intro:

Tofu is usually not a good choice for stir-fry due to its softness and difficulty in soaking sauces. These problems are be overcome by using frozen tofu. Frozen tofu is just tofu that is frozen and then thawed before cooking. The freezing process turns tofu into a sponge that is great for soaking up soup and sauces. Frozen tofu has a unique texture and can stay in shape when cooking so it’s great for stir-fry. Give it a try!

Use Frozen Tofu for stir-fry because: 1. it can stay in shape better, 2.soak up all the sauces.

Tip.2

Stir-fry tofu first if using Can tomato. Can tomato can save you some work!

Scramble couple eggs to add additional texture and richness in flavor to the dish

 

Cookware:

  1. Heat source –Stove
  2. 1 non-stick pan
  3. Knife
  4. Cutting board
  5. Measuring cup

Ingredients

Protein:

1. Frozen Tofu (medium to firm) – 1 box (~ 14 oz)

2. (optional, G.E.M.) Eggs (2)

Vegetable:

3. Tomato (any kind you like) – 0.5 lb (feel free to add more if you like tomato).

(optional) Use canned tomato (~ ½ can) if you like. No cutting tomato this way.

Sauce/condiments/Spices

Units: t = teaspoon, T = tablespoon, C = Cup.

*note* relative ratio is more important the absolute amount.

  1. Oil – 1 t
  2. Cooking wine (water is ok) – ¼ C
  3. Ketchup (1 T)
  4. Salt – 1 t (reduce to 0.5 or just a pinch if you eat light)

Before Cooking:

Cut frozen tofu into ~ 1 to 2” cubes.

How to make frozen tofu? EASY! Just freeze tofu ahead of time, and defrost it before cooking (I find the “auto-defrost” in microwave to be the quickest way to de-frost)

Cut tomato into bite size (~ 1 to 2” pieces). Skip if you use can tomato.

Scramble eggs in a container.

In the non-stick pan, put 1 t of Oil, and then turn heat to medium.

Add Tomato pieces + salt into the pan, let it cook for 2 to 3 min.

Add frozen tofu, cooking wine, and ketchup into the pan. Stir to mix. Let it cook for ~ 3 min or until tomato softens.

G.E.M.1 (optional step)

(Push the tofu and tomato on the side), add eggs, cook for ~ 30 to 60s, then mix with tofu and tomato. Turn heat off.

Ready to serve!
