Cut broccoli (0.5 lb) into bite size, boil (1 min). Mix beef strips (1 lb) + Chopped Garlic (3 cloves) + Soy Sauce (3T) + Surgar (1 T) + Vinegar (1 T) + Corn starch (1 t). Add mixture into a hot pan. Stir-fry for 1 to 2 min. Add Broccoli and stir to mix with beef. Ready to serve!
BOIL the broccoli before Stir Fry. This step reduces cooking time significantly and helps Broccoli stay fresh and crisp.
Add some Corn Starch when marinating BEEF. It helps the marinate to “stick” to beef and gives a soft, smooth texture.
- Heat source – stove
- Chinese Wok – 12”
- Cutting board
- Measuring spoon
- Large Slotted spoon
- Thinly sliced Beef of your choice (any thinly sliced steak will work) – 1 lb
2. Broccoli – 0.5 lb
- Oil – 1 T
- Cornstarch -1 t
- Soy sauce -3T
- Vinegar (any kind) – 1T
- Sugar – 1 T
- Garlic – 3 cloves
- (optional) Oyster Sauce – 2 T
Smash the garlic cloves and remove skin (chop into smaller pieces if you like, not required).
Place beef on cutting board and cut it into ~ 1 to 2” inch wide slices (or whatever size you want, I add a coin to show the approximate size).
On a cutting board, cut broccoli into bite size florets.
In the medium bowl, mix Soy sauce, Sugar, Vinegar, cornstarch, and sliced beef, set them aside for later use.
While beef is marinating, fill the wok with cold tap water to ~ 1 to 2 ” deep in the wok, turn heat on high to bring water to a boil.
Once water reaches a boil, add broccoli pieces into the wok, cook for ~ 1 min.
Pick up the broccoli after 1 mins with slotted spoon, drain and leave them in a large bowl. Pour the remaining hot water in the wok into kitchen sink
Put wok back to the stove and turn heat back to high. The wok is hot when all the water evaporates.
Add oil (1T) into the hot wok, spread oil around the wok using garlic on the fork (Pic above).
Pour the beef marinate mixture into the wok. Wait 1 min and flip the beef over for ~1 min.
Put broccoli back into the wok, stir together the beef and broccoli.
Pour in the oyster sauce and stir to reach a uniform mixture.
Ready to serve!
